Most of you probably don't know what "
Quark" is. It's a German soft cheese that is very popular and eaten regularly in most German households. It's very popular for breakfast (you put it under your jam on your bread), and also as a dessert mixed with some fruit, milk or cream, and some sugar. It's the main ingredient in cheesecake. It's very cheap and readily available. But in this country it is a luxury item and very hard to find. We almost never buy it, because 8 oz cost $5 (in Germany you would pay about $0.60 for this). However, when Easter comes around, I need it to make our traditional
Paskha dish. One of the larger grocery store chains in the area does carry it, but they only had two in stock -- we needed seven. They called all the other branches in the area, but there was none to be found. We could have ordered some quark online for $65.00 (overnight refrigerated shipping), but that was out of the question. (I was very proud of myself for having discovered this option, but for some reason Peter was less excited.) Luckily, we found some French cheese (
fromage blanc), which seems to be similar to quark, although lower in fat. For a while it looked as though we wouldn't be able to make this dish, but now we're all set. I will start making it on Friday in the morning so that we can enjoy it on Easter for breakfast. Tomorrow we will be making
Hot Cross Buns for Good Friday and Chervil Soup for Holy Thursday. We will go to church in the evening. Unfortunately, we will have to drive to a different church much farther south (same pastor) because that's the only church with a service tomorrow. Since he has to serve three parishes, he is having the Holy Thursday Mass in one, Good Friday in the second, and Easter in the third. Tomorrow will also be time to prepare for confession by doing a
detailed examination of conscience.
Quark gehört in unser Familien-Pascharezept.
